Test Kitchen started on a two-burner stove in a Navrangpura kitchen, with one dark chocolate cake and a waitlist of neighbours. Three years on, the stove has upgraded — the process hasn’t.
We still hand-temper every batch of ganache in small copper pans, still crumb-coat each cake twice before the final layer, still bake to order instead of stacking a display fridge. If a batch of ganache doesn’t set with the right glassy sheen, it doesn’t leave the kitchen.
